Introducing “Pét Sounds;” our first white Pét-Nat!
Made up of 60% Clairette Blanche and 40% Sauvignon Blanc and in collaboration with Los Angeles-based record store, In Sheep’s Clothing. Foot crushed, sans soufre/nothing added, 0/0. This wine is tropical and ebullient.
TASTING NOTES: Tropical, fresh papaya, mango, kiwi; ebullient with zesty acid.
GRAPES: Clairette Blanche is from Martian Ranch; biodynamic, Los Alamos. Sauvignon Blanc is from Presqu’ile Vineyard; organic, Santa Maria Valley.
PRODUCTION: Foot crushed, 4 hours on skins, then basket pressed to Oeno Tank for primary fermentation. Aged on gross lees for 5 months, then racked to tank for bottling. Secondary fermentation in bottle. Sans soufre/nothing added.
FOOD PAIRING: Baked garlic Dungeness crab, bruschetta, lamb shawarma with extra toum and labneh.
