Region: Voglezang Vineyard, Santa Ynez

Production: Harvested at 25 Brix on the 10th of October, then direct-pressed, capped while still fermenting for natural bubbles, with absolutely zero So2 added during production. Racked twice. Unfined and unfiltered.

Style: Light-bodied red pét nat, disco bubbles

Tasting notes: Figs, spiced baked plums, rain-soaked clay, red fruit leather

Food pairings: Szechuan fried chicken, Gâteau Basque, vanilla soft serve topped with Maldon sea salt and an olive oil drizzle
